ICT Reset: Suits phases 1-4

Ingredients

  • 400gm asparagus, trimmed
  • 400gm green beans, trimmed
  • 10 radishes, thinly sliced
  • 2 Tbsp sesame seeds

DRESSING

  • 2 Tbsp olive oil
  • 1 Tbsp vinaigrette
  • 1 lemon, zest and juice
  • 1 tsp Dijon mustard
  • 1 tsp garlic, minced
  • Salt and pepper to taste

Method

  1. Cut the asparagus and green beans into 5 cm pieces, and steam or blanch in boiling water for 1-2 minutes, keeping crisp and crunchy. Drain, pat dry, then place into a large salad bowl.
  2. Finely slice the radish, and add to the asparagus and green beans, along with the sesame seeds.
  3. Place all other ingredients into a jar with a tight-fitting lid and shake well. Pour over salad and toss before serving.
