Ingredients
- 400gm asparagus, trimmed
- 400gm green beans, trimmed
- 10 radishes, thinly sliced
- 2 Tbsp sesame seeds
DRESSING
- 2 Tbsp olive oil
- 1 Tbsp vinaigrette
- 1 lemon, zest and juice
- 1 tsp Dijon mustard
- 1 tsp garlic, minced
- Salt and pepper to taste
Method
- Cut the asparagus and green beans into 5 cm pieces, and steam or blanch in boiling water for 1-2 minutes, keeping crisp and crunchy. Drain, pat dry, then place into a large salad bowl.
- Finely slice the radish, and add to the asparagus and green beans, along with the sesame seeds.
- Place all other ingredients into a jar with a tight-fitting lid and shake well. Pour over salad and toss before serving.
