We love this versatile way to get some extra healthy fat onto your plate. It’s a dip, a paste, a topping, or a side – whatever you choose. Serves 4
Ingredients
2 large avocadoes
1 lime, juice only
1 red chilli, finely chopped
50g coriander leaves
to taste salt and pepper
Method
- Halve and stone the avocadoes. Scoop the flesh into a large bowl. Add the remaining ingredients and mash with a fork to mix well.
- Serve on slices of raw sweet potato or cucumber, as a filling in celery sticks, or as a side to pan-fried chicken.
