Dice, chop, squeeze, pour and mix. Salsa is ready. This is amazingly versatile and is a great way to enjoy more avocado, one of the first ‘superfoods’. Serves 4


1 avocado, diced
2 Roma tomatoes, diced
¼ red onion, finely diced
½ bunch coriander, roughly chopped
1 clove garlic, finely chopped
1 red chilli, finely chopped
2 Tbsp lemon juice
2 Tbsp olive oil
1 Salt and pepper to taste


  1. Carefully mix all ingredients together. Serve on grilled chicken or fish.
