Great Shape: 1 protein, 1 ½ fat, 1 vegetable
Serves 6
Ingredients
1 large can tuna in oil, drained and flaked
1 cucumber, sliced
2 avocados, peeled, pitted & sliced
1 small/medium red onion, thinly sliced
½ small bunch of coriander (1/4 cup chopped)
2 Tbsp fresh lemon juice
2 Tbsp extra virgin olive oil
1 tsp sea salt, or to taste
⅛ tsp black pepper
Method
- In a large salad bowl, combine the tuna, cucumber, avocado, red onion, and coriander.
- Drizzle the salad with the lemon juice, olive oil, salt and black pepper (or season to taste). Toss to combine and serve.
