Baked broccoli

Steamed broccoli is great, but when you want a little bit of excitement without much effort, here’s a great way to serve it. Serves 8


2 large heads broccoli
6 Tbsp olive oil
1 ½ tsp salt
½ tsp freshly ground black pepper
4 cloves garlic, sliced
1 lemon, zest and juice
3 Tbsp toasted pine nuts
1/3 cup grated parmesan


  1. Preheat oven to 220° C.
  2. Cut broccoli into large florets. If you’ve washed the broccoli, make sure it is dried well.
  3. Place the broccoli on a baking tray and toss with 5 Tbsp olive oil, salt and pepper. Add the garlic and toss. Bake for 20 to 25 minutes, until crisp-tender and starting to brown slightly.
  4. Sprinkle with lemon zest and juice. Add remaining oil, pine nuts and parmesan, toss and serve with steamed vegies and meat of choice.
