Reset – suits all phases
8 free-range chicken thighs or drumsticks
1 punnet cherry tomatoes
1 bunch fresh basil, leaves picked
1 bulb garlic, broken into cloves
1 handful black olives, pitted
sea salt and black pepper
1 dried red chilli
8 slices pancetta or thin-sliced bacon
- Preheat the oven to 180ºC. Place all but the pancetta in a baking tray and toss well to mix it up. Reposition the chicken on top and bake for 30 minutes.
- Turn the chicken and bake a further 30 minutes.
- Place the pancetta or bacon on top of the chicken and return to the oven for 15 minutes, until the chicken is cooked and falling off the bone.
- Serve with a crisp green salad.
