The gorgonzola in this butter adds a delightful flavour, even for those who are not fans of blue cheese. What a way to add a little fat to your meal! Serves 8


1/2 cup unsalted butter, softened
1/2 cup crumbled gorgonzola or other blue cheese
3 Tbsp finely chopped fresh thyme
2 Tbsp finely chopped fresh rosemary
2 Tbsp finely chopped fresh Italian parsley
1 tsp crushed red pepper flakes
2 cloves garlic
1/4 cup pine nuts
to taste, salt and pepper
8 (100g) beef tenderloin fillets


  1. Preheat a BBQ to medium-high heat.
  2. Place all ingredients except salt and pepper and beef into the bowl of a food processor. Puree until incorporated, taste, then season to taste with salt and pepper.
  3. Season the steaks on all sides with salt and pepper. Grill to your liking on preheated BBQ, about 5 minutes per side for medium-rare.
  4. To serve, top each with about 2 Tbsp of the butter. Enjoy with a fresh salad.
