Suits all phases – Serves 10
1.5 kg beef sirloin or porterhouse
Salt and freshly ground pepper to season
2 Tbsp olive oil
Large bag rocket leaves
1.5 Tbsp capers, finely chopped
3 Tbsp gherkins, finely chopped
4 spring onions, finely chopped
1 Tbsp parsley, finely chopped
Juice of a lemon
5 Tbsp extra-virgin olive oil
- Rub the oil on the meat, then season with salt and freshly ground black pepper.
- Place the beef in a fry pan or BBQ and cook for 5 minutes on each side, or done to your liking. Set aside to rest.
- To make the salsa verde, combine the capers, gherkins, spring onions, parsley, lemon juice and olive oil in a bowl.
- Arrange the rocket leaves on plates. Thinly slice the beef and place on top of the rocket. Top with the salsa verde and serve with vegies of choice.
