Suits all phases – Serves 10


1.5 kg beef sirloin or porterhouse
Salt and freshly ground pepper to season
2 Tbsp olive oil
Large bag rocket leaves
1.5 Tbsp capers, finely chopped
3 Tbsp gherkins, finely chopped
4 spring onions, finely chopped
1 Tbsp parsley, finely chopped
Juice of a lemon
5 Tbsp extra-virgin olive oil


  1. Rub the oil on the meat, then season with salt and freshly ground black pepper.
  2. Place the beef in a fry pan or BBQ and cook for 5 minutes on each side, or done to your liking. Set aside to rest.
  3. To make the salsa verde, combine the capers, gherkins, spring onions, parsley, lemon juice and olive oil in a bowl.
  4. Arrange the rocket leaves on plates. Thinly slice the beef and place on top of the rocket. Top with the salsa verde and serve with vegies of choice.
