Breakfast pork patties

Suits all phases – Serves 6

Ingredients

3 cloves garlic, minced
2 tsp sage leaves, finely chopped
3 spring onions, chopped
1 Tbsp lemon juice
2 tsp salt
1 tsp freshly ground pepper
1/2 tsp cayenne
Pinch of red pepper flakes
1kg minced pork
Olive oil

Method

  1. Combine the garlic, sage, spring onion, lemon juice, and spices in a large bowl. Add the ground pork into the bowl and use your hands to mix well. Roll the mixture into small balls and flatten to about 1cm thickness.
  2. Heat the olive oil in a large skillet to medium-high and work in batches to brown the patties on each side. Serve warm with fried mushrooms, spinach and capsicum.

    Note: The patties can be cooked ahead and frozen, and reheated in a fry pan or in the microwave.
