Suits all phases – Serves 6
Ingredients
3 cloves garlic, minced
2 tsp sage leaves, finely chopped
3 spring onions, chopped
1 Tbsp lemon juice
2 tsp salt
1 tsp freshly ground pepper
1/2 tsp cayenne
Pinch of red pepper flakes
1kg minced pork
Olive oil
Method
- Combine the garlic, sage, spring onion, lemon juice, and spices in a large bowl. Add the ground pork into the bowl and use your hands to mix well. Roll the mixture into small balls and flatten to about 1cm thickness.
- Heat the olive oil in a large skillet to medium-high and work in batches to brown the patties on each side. Serve warm with fried mushrooms, spinach and capsicum.
Note: The patties can be cooked ahead and frozen, and reheated in a fry pan or in the microwave.
