This is just too easy: throw everything in the food processor or blender, and serve on chicken or fish. Makes 6 servings
Ingredients
500g frozen broad beans, defrosted
1 cup Greek yoghurt
1 tsp finely chopped fresh ginger
1 clove garlic, peeled
1 Tbsp soy sauce
2 tsp lemon juice
½ cup chopped fresh mint
to taste salt and pepper
Method
- Blend or process all ingredients to form a smooth sauce consistency.
- Serve chilled over grilled fish or chicken.
