This actually takes less time to prepare and cook than it does to make a salad, making it an excellent choice for a weeknight meal. Serves 3

Ingredients

1 Tbsp olive oil
1 medium onion, chopped
1 large clove garlic, crushed
250g tomatoes, peeled and diced
1 Tbsp lemon juice & a little lemon zest
¼ tsp saffron threads, crushed with a little water (optional)
600g calamari rings
1 generous handful fresh coriander and parsley, chopped

Method

  1. Heat the oil in a small pan over medium heat. Add the onion and cook until softened, then add garlic and stir for 2 minutes.
  2. Add tomato, lemon juice, zest and saffron, and stir to combine.
  3. Stir in calamari and pour in just enough water to cover. Simmer for 5 mins or until the calamari is opaque but not rubbery.
  4. Stir in the herbs and serve with a green salad.
