Set aside two minutes in the morning to marinate the pork, then in less than 10 minutes that evening you’ll have dinner on the table. Serves 4


500g pork top loin
1 large red onion, sliced
¾ cup fresh lime juice
1 tsp salt
½ tsp cayenne pepper


  1. Place pork and onion in a glass or enamel baking dish.
  2. Combine lime juice, salt and cayenne, pour over pork; cover and refrigerate for several hours.
  3. Lift pork steaks out of marinade, brushing off onions. Grill on a hot plate for 6-8 minutes, turning once or until cooked.
  4. Heat onions and lime juice to boiling. Place onions on cooked pork. Serve with mixed green salad.
