Serves 4
Ingredients
- 1 head of broccoli, blitzed
- 150g shredded tasty cheese
- 3 eggs whisked
- 2 tbsp almond meal
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Method
- Preheat oven to 180oC.
- Mix everything together in a big bowl.
- Spray a muffin tin with cooking spray or grease with butter.
- Spoon mixture into 12 equal serves. Bake the muffins for 20-25 mins or until set and golden.
Grab a couple of these bad boys for a quick breakfast or pair it with a salad or some roast veg for an easy lunch/dinner! Enjoy!
