Chia breakfast pudding - Healthy Inspirations

Chia breakfast pudding

Suits all phases – Serves 4

Ingredients

1 (400g) can coconut milk
70ml cold water
1 tsp vanilla extract
½ tsp ground cinnamon
½ cup chia seeds
1 cup fresh raspberries or chopped strawberries
6 passionfruit
2 Tbsp coconut flakes
2 Tbsp roasted nuts, crushed

Method

  1. Combine the coconut milk, water, vanilla and cinnamon, stirring well. Add the chia seeds and set aside for 30 minutes to allow the seeds to absorb the liquid.
  2. Cover the seeds and refrigerate overnight.
  3. Combine the berries and passionfruit pulp.
  4. Place a spoon of chia pudding in each of 4 serving glasses. Top with a spoon of fruit, another spoon of chia and more fruit. Sprinkle with coconut and nuts and serve.
