Suits all phases – Serves 4
1 (400g) can coconut milk
70ml cold water
1 tsp vanilla extract
½ tsp ground cinnamon
½ cup chia seeds
1 cup fresh raspberries or chopped strawberries
2 Tbsp coconut flakes
2 Tbsp roasted nuts, crushed
- Combine the coconut milk, water, vanilla and cinnamon, stirring well. Add the chia seeds and set aside for 30 minutes to allow the seeds to absorb the liquid.
- Cover the seeds and refrigerate overnight.
- Combine the berries and passionfruit pulp.
- Place a spoon of chia pudding in each of 4 serving glasses. Top with a spoon of fruit, another spoon of chia and more fruit. Sprinkle with coconut and nuts and serve.
