The beautiful colour and texture of fresh figs, along with the gentle bite of white castello cheese, takes this salad from basic throw-together to an exotic treat. Serves 4


4 slices The Protein Company Bread
2 Tbsp olive oil
1 cos lettuce, leaves torn
6 figs, quartered
500g cooked sliced chicken
100g white castello cheese (or brie), sliced
to taste salt and pepper
Tbsp extra virgin olive oil
1 1/2 Tbsp white balsamic vinegar
2 tsp wholegrain mustard


  1. Preheat oven to 180 C. Grease a large oven tray lightly with oil.
  2. To make croutons, cut The Protein Company Bread into 7mm slices and arrange on the tray. Baste lightly with oil, and bake for about 5 minutes, or until lightly golden. Cool. Cut into cubes.
  3. To make dressing, combine oil, vinegar and mustard in a small jar with a lid. Seal tightly and shake to combine. Season to taste to taste with salt and pepper.
  4. Arrange the lettuce, figs, chicken, croutons and cheese on serving plates or platter. Drizzle with dressing, and serve.
