The beautiful colour and texture of fresh figs, along with the gentle bite of white castello cheese, takes this salad from basic throw-together to an exotic treat. Serves 4
4 slices The Protein Company Bread
2 Tbsp olive oil
1 cos lettuce, leaves torn
6 figs, quartered
500g cooked sliced chicken
100g white castello cheese (or brie), sliced
to taste salt and pepper
Tbsp extra virgin olive oil
1 1/2 Tbsp white balsamic vinegar
2 tsp wholegrain mustard
- Preheat oven to 180 C. Grease a large oven tray lightly with oil.
- To make croutons, cut The Protein Company Bread into 7mm slices and arrange on the tray. Baste lightly with oil, and bake for about 5 minutes, or until lightly golden. Cool. Cut into cubes.
- To make dressing, combine oil, vinegar and mustard in a small jar with a lid. Seal tightly and shake to combine. Season to taste to taste with salt and pepper.
- Arrange the lettuce, figs, chicken, croutons and cheese on serving plates or platter. Drizzle with dressing, and serve.
