Everyone’s favourite in the cooler weather or if you’re feeling under the weather, chicken soup is good for nutrition and the soul. Serves about 8
1 large organic chicken
1 1/2 Tbsp salt
2 large brown onions, diced
2 carrots, diced
to taste pepper
- Wash the chicken and place in a large stock pot. Cover with boiling water, add salt, and boil rapidly for 15-20 minutes. Scoop any surface residue off with a tea strainer. Add more water as needed to ensure the chicken is completely covered.
- When the surface of the water remains clear, add the onion, carrot and pepper and bring to the boil again, then simmer for 2 hours.
- Remove the chicken and put aside in the fridge. Refrigerate the soup liquid once it has cooled.
- When ready, add some cooked chicken to the soup liquid, heat and serve.
