Everyone’s favourite in the cooler weather or if you’re feeling under the weather, chicken soup is good for nutrition and the soul. Serves about 8

Ingredients

1 large organic chicken
1 1/2 Tbsp salt
2 large brown onions, diced
2 carrots, diced
to taste pepper

Method

  1. Wash the chicken and place in a large stock pot. Cover with boiling water, add salt, and boil rapidly for 15-20 minutes. Scoop any surface residue off with a tea strainer. Add more water as needed to ensure the chicken is completely covered.
  2. When the surface of the water remains clear, add the onion, carrot and pepper and bring to the boil again, then simmer for 2 hours.
  3. Remove the chicken and put aside in the fridge. Refrigerate the soup liquid once it has cooled.
  4. When ready, add some cooked chicken to the soup liquid, heat and serve.
