This is such a simple and filling meal; quick to prepare and of course it’s amazingly healthy, too. Serves 4


4 cups cooked diced chicken
½ cup drained sliced sun-dried tomatoes
1 apple, cored and diced
4 cups shredded green cabbage
4 cups shredded red cabbage
½ cup slivered almonds
¼ cup extra virgin olive oil
4 Tbsp balsamic vinegar
2 Tbsp dried oregano
to taste, black pepper


  1. Mix all ingredients together and serve.
