Ingredients
½ tsp butter
1 medium diced onion
500 g chicken fillets, diced into 2cm pieces
1 clove garlic, minced
Sprinkle of dried oregano & dried basil
Salt & pepper
2 medium zucchini
400 g crushed tomatoes
1 punnet cherry tomatoes, cut in half
100 g raw cashews
Seasoning: a sprinkle each of turmeric, paprika, and salt

Method
- Heat a large pan over medium/high heat. Add butter and onion, and cook for 30 seconds to 1 minute.
- Add chicken and garlic to the pan. Season with basil, oregano, salt & pepper. Cook chicken for 5-6 minutes or until golden.
- While the chicken is cooking, make the zoodles: spiralise the zucchini (or use a vegetable peeler to create ribbons).
- Add the crushed tomatoes to the chicken and let it simmer for 3-5 minutes.
- Roast the cashews in another pan (or oven) until golden. Season with paprika, turmeric, and salt.
- Add the zoodles and cherry tomatoes, and season with extra salt to taste. Cook for another 1 minute then turn off heat.
- Sprinkle the chicken with spiced cashews and fresh basil.
