Serves 4

Reset: Suits all phases
Great Shape: protein, vegetable, fat


½ tsp butter
1 medium diced onion
500 g chicken fillets, diced into 2cm pieces
1 clove garlic, minced
Sprinkle of dried oregano & dried basil
Salt & pepper
2 medium zucchini
400 g crushed tomatoes
1 punnet cherry tomatoes, cut in half
100 g raw cashews
Seasoning: a sprinkle each of turmeric, paprika, and salt
Salt & pepper

  1. Heat a large pan over medium/high heat. Add butter and onion, and cook for 30 seconds to 1 minute. 
  2. Add chicken and garlic to the pan. Season with basil, oregano, salt & pepper. Cook chicken for 5-6 minutes or until golden.
  3. While the chicken is cooking, make the zoodles: spiralise the zucchini (or use a vegetable peeler to create ribbons). 
  4. Add the crushed tomatoes to the chicken and let it simmer for 3-5 minutes.
  5. Roast the cashews in another pan (or oven) until golden. Season with paprika, turmeric, and salt.
  6. Add the zoodles and cherry tomatoes, and season with extra salt to taste. Cook for another 1 minute then turn off heat.
  7. Sprinkle the chicken with spiced cashews and fresh basil.
