Suits all phases – Serves 4
1 Tbsp olive oil
800g chicken breasts
2 tsp garlic, finely chopped
1 green capsicum, finely sliced
2 Tbsp dark balsamic vinegar
200g button mushrooms
1 large onion, finely sliced
Salt and freshly ground pepper to taste
- Preheat the oven 200°C. Heat the oil in a medium size saucepan. Seal the chicken in the heated oil by cooking on both sides until the meat whitens. This takes 5 minutes.
- Drain the fried chicken on some kitchen paper and place aside to cool down.
- Combine the chicken, capsicum, onion, garlic and mushrooms in a bowl. Pour the balsamic vinegar over the mixture and season with salt and freshly ground pepper. Marinate in the fridge for an hour.
- Bake for 30 minutes and serve with vegies of your choice.
