Suits all phases – Makes 2 cups


½ cup minced shallots
2 tsp finely grated orange zest
2 tsp finely grated lemon zest
½ cup orange juice
¼ cup lemon juice
¼ cup lime juice
2 Tbsp Dijon mustard
2/3 cup olive oil
¼ cup finely chopped tarragon, chives, basil or parsley
½ tsp black pepper


  1. In a medium bowl, whisk together the shallots, zests, juices and mustard, and let stand for 3 minutes.
  2. Slowly whisk in the olive oil until emulsified. Stir in the herbs and pepper.
