700g pork Scotch fillet
Salt and pepper to taste
¼ cup golden flaxseed meal
2 tsp cumin
1 tsp coriander
1 tsp cardamom
3 Tbsp coconut oil
2 medium red capsicums, sliced
1 medium onion, sliced
4 stalks celery, sliced
½ cup white wine
Season both sides of pork with salt and pepper. Then, mix together the flaxseed meal, cumin, coriander and cardamom. Press the pork into the crust mixture, making sure to coat all sides.
Heat the coconut oil in a cast iron skillet on medium-high heat. Add the pork to the pan and cook for about 5 minutes.
Flip the pork over and reduce heat to medium-low. Continue cooking until pork is cooked through.
Remove pork and place in foil to rest. Season the vegetables with salt and pepper, then add to the same pan and sauté until soft.
Add the white wine and continue to cook until wine has reduced.
Serve the pork with vegetables.
