Devilled avocado eggs

Serves 3 (or 6 as an appetiser)

Ingredients

4 – 6 eggs
1 avocado
¼ tsp sea salt
¼ tsp pepper
¼ tsp garlic
¼ tsp chili powder
¼ tsp cumin
¼ tsp smoked paprika, optional
1/2 lime
2 Tbsp coriander

Method

  1. Place eggs in a medium pot and cover with water until fully submerged. Bring to a boil, then remove from heat and cover for 12–13 minutes.
  2. Fill a large bowl with ice water and, using a slotted spoon, gently place eggs in the bowl, allowing eggs to chill for 5 minutes.
  3. Remove the shell and casing from eggs and slice in half lengthwise.
  4. Remove the yolks and add them to a bowl along with the avocado and spices, mixing together until well combined.
  5. Spoon the mixture into the egg halves, drizzle with lime juice, and top with coriander.
