Fish with macadamia salsa

While it sounds exotic, the macadamia salsa is very simple to make: and beautifully compliments the mild-tasting fish. Serves 4


500 g white fish fillets
¼ cup macadamia nuts, halved
1 medium tomato, chopped
1 avocado, peeled, seeded and diced
3 Tbsp fresh coriander, chopped
3 Tbsp fresh flat-leaf parsley, chopped
1 Tbsp olive oil


  1. Preheat large fry pan or BBQ to medium heat.
  2. Season fish lightly with sea salt (if desired) and freshly ground black pepper.
  3. Cook fish for about 3-4 minutes (turning once), or until it flakes easily with a fork.
  4. To make salsa, toss macadamias, tomatoes, avocado, coriander, and parsley together in a medium mixing bowl. Add olive oil to coat.
  5. Top the fish with the salsa and serve with salad or vegies.
