While it may sound exotic, the macadamia salsa is simple to make, and compliments the fish. The Tabasco in the salsa gives it a kick to your taste-buds!!

Serves 4


  • 600gm white fish fillets
  • Salt and pepper to taste
  • 1 Tbsp olive oil
  • 16 macadamia nuts, halved
  • 1 medium tomato, chopped
  • 1 avocado, peeled and chopped
  • 3 Tbsp fresh coriander, chopped
  • 3 Tbsp flat-leaf parsley, chopped
  • 1 Tbsp olive oil
  • Tabasco sauce (optional)


  1. Pre-heat large pan or BBQ to medium heat.
  2. Season fish lightly with salt and pepper.
  3. Cook or BBQ fish, turning once, until tender.
  4. To make salsa: in a bowl mix the nuts, tomato, avocado, coriander and parsley together. Add olive oil (and Tabasco if using) and mix through.
  5. Plate the fish and top with the salsa, serving with a salad or vegies.
