While it may sound exotic, the macadamia salsa is simple to make, and compliments the fish. The Tabasco in the salsa gives it a kick to your taste-buds!!

Ingredients
- 600gm white fish fillets
- Salt and pepper to taste
- 1 Tbsp olive oil
- 16 macadamia nuts, halved
- 1 medium tomato, chopped
- 1 avocado, peeled and chopped
- 3 Tbsp fresh coriander, chopped
- 3 Tbsp flat-leaf parsley, chopped
- 1 Tbsp olive oil
- Tabasco sauce (optional)
Method
- Pre-heat large pan or BBQ to medium heat.
- Season fish lightly with salt and pepper.
- Cook or BBQ fish, turning once, until tender.
- To make salsa: in a bowl mix the nuts, tomato, avocado, coriander and parsley together. Add olive oil (and Tabasco if using) and mix through.
- Plate the fish and top with the salsa, serving with a salad or vegies.
