Fish with lemon and feta, alongside delicious roasted vegetables, makes for a delightful meal. Serves 4


500g Brussels sprouts
350g broccoli, cut into florets
2 Tbsp olive oil
120g feta, crumbled
4 (150g) firm white fish fillets
1 tsp lemon pepper seasoning
1 lemon, cut into wedges


  1. Preheat oven to 180°C/160°C fan-forced. Combine Brussels sprouts, broccoli and 1 Tbsp oil in a large roasting pan. Roast for 30 minutes or until vegetables are almost tender.
  2. Meanwhile, line a baking tray with baking paper. Place fish on tray and drizzle with remaining oil. Sprinkle with lemon pepper.
  3. Sprinkle vegetables with feta. Return vegetables to the oven, along with the fish, and bake for 10 minutes or until vegetables are tender and fish is just cooked through.
  4. Serve fish with vegies and lemon wedges.
