Fish with lemon and feta, alongside delicious roasted vegetables, makes for a delightful meal. Serves 4
500g Brussels sprouts
350g broccoli, cut into florets
2 Tbsp olive oil
120g feta, crumbled
4 (150g) firm white fish fillets
1 tsp lemon pepper seasoning
1 lemon, cut into wedges
- Preheat oven to 180°C/160°C fan-forced. Combine Brussels sprouts, broccoli and 1 Tbsp oil in a large roasting pan. Roast for 30 minutes or until vegetables are almost tender.
- Meanwhile, line a baking tray with baking paper. Place fish on tray and drizzle with remaining oil. Sprinkle with lemon pepper.
- Sprinkle vegetables with feta. Return vegetables to the oven, along with the fish, and bake for 10 minutes or until vegetables are tender and fish is just cooked through.
- Serve fish with vegies and lemon wedges.
