Great Shape: protein, 4 vegetables, 1 dairy, 1 fat
Serves 4
Ingredients
1 large swede, cut in 1 cm cubes
2 zucchini, sliced
400g green beans, halved
1 large head of broccoli, cut into florets and stalk trimmed and diced
2 large capsicum, cut into thick squares
500g smoked sausage, sliced into 1 cm thick slices
6 Tbsp olive oil
1/4 tsp red pepper flakes optional
1 tsp paprika
1/2 tsp garlic powder
1 Tbsp dried oregano
1 Tbsp dried parsley
1/4 tsp salt
1/4 tsp pepper fresh parsley
freshly grated Parmesan cheese
Method
- Preheat the oven to 200°C. Line a large baking tray with foil or baking paper.
- Place all the vegies and sausage on the baking tray. Pour the olive oil and all the spices on top and toss to evenly coat.
- Bake 15 minutes, remove from the oven and flip everything around. Return to the oven and bake for another 10-15 minutes or until vegetables are crisp tender and sausage is browned.
- Sprinkle with freshly grated parmesan and fresh parsley.
