Reset: Suits all phases

Great Shape: protein, 4 vegetables, 1 dairy, 1 fat

Serves 4

Ingredients

1 large swede, cut in 1 cm cubes
2 zucchini, sliced
400g green beans, halved
1 large head of broccoli, cut into florets and stalk trimmed and diced
2 large capsicum, cut into thick squares
500g smoked sausage, sliced into 1 cm thick slices
6 Tbsp olive oil
1/4 tsp red pepper flakes optional
1 tsp paprika
1/2 tsp garlic powder
1 Tbsp dried oregano
1 Tbsp dried parsley
1/4 tsp salt
1/4 tsp pepper fresh parsley
freshly grated Parmesan cheese

Method

  1. Preheat the oven to 200°C. Line a large baking tray with foil or baking paper.
  2. Place all the vegies and sausage on the baking tray. Pour the olive oil and all the spices on top and toss to evenly coat.
  3. Bake 15 minutes, remove from the oven and flip everything around. Return to the oven and bake for another 10-15 minutes or until vegetables are crisp tender and sausage is browned.
  4. Sprinkle with freshly grated parmesan and fresh parsley.
