Suits ICT Reset Phases 1-4


  • Olive oil
  • 1 garlic clove, minced
  • ½ cup olives, pitted and halved
  • 1 punnet cherry tomatoes, halved
  • Juice of 2 lemons
  • 2 tsp balsamic vinegar
  • 600g white fish
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 100g feta, crumbled


  1. Heat olive oil in medium-size pan and lightly saute garlic.
  2. Add olives and tomatoes, ¾ of the lemon juice and vinegar, and cover pan. Simmer until tomatoes cooked. Set aside.
  3. Place fish fillets on baking paper on tray. Brush with olive oil and pour remaining lemon juice over. Season with basil, oregano and salt and pepper to taste.
  4. Place tray under grill and cook until fish is cooked.
  5. Sprinkle the feta over the fish and grill until feta is browned.
  6. Serve fish and sauce on a plate with a mixed lettuce, avocado and fresh basil salad.
