Everyone knows how healthy the Mediterranean diet is, so here’s an idea that’s healthy, tasty, and is an excellent way to get more fish into your diet. Serves 4
Ingredients
1/2 cup olive oil
1 garlic clove, minced
1/3 cup mixed olives, pitted and chopped
3 Tbsp lemon juice
2 tsp balsamic vinegar
500g white fish
2 Tbsp extra virgin olive oil
1 tsp dried basil
1 tsp dried oregano
1/3 cup feta, crumbled
1 medium tomato, peeled, seeded and diced
Method
- For sauce, heat 1/3 cup olive oil and lightly saute garlic in medium-sized pan. Reduce heat to low and add olives, 2 Tbsp lemon juice and vinegar. Cook until blended. Set aside.
- Brush fish fillets with extra virgin olive oil and sprinkle with 1 Tbsp lemon juice on both sides. Place on a grill tray and season with basil and oregano. Grill until the fillets are almost opaque.
- Sprinkle with feta and grill until the edges of the feta are very light brown.
- To serve, place sauce on plates and top with the fish. Garnish with tomato.
