Ingredients
- Olive oil
- 1 garlic clove, minced
- ½ cup olives, pitted and halved
- 1 punnet cherry tomatoes, halved
- Juice of 2 lemons
- 2 tsp balsamic vinegar
- 600g white fish
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 100g feta, crumbled
Method
- Heat olive oil in medium-size pan and lightly saute garlic.
- Add olives and tomatoes, ¾ of the lemon juice and vinegar, and cover pan. Simmer until tomatoes cooked. Set aside.
- Place fish fillets on baking paper on tray. Brush with olive oil and pour remaining lemon juice over. Season with basil, oregano and salt and pepper to taste.
- Place tray under grill and cook until fish is cooked.
- Sprinkle the feta over the fish and grill until feta is browned.
- Serve fish and sauce on a plate with a mixed lettuce, avocado and fresh basil salad.
