This traditional Greek salad is excellent with lamb and is super-easy to make. Serves 6


6 tomatoes, cut into thin wedges
1 red onion, cut into thin rings
2 Lebanese cucumbers, sliced
30 Kalamata olives
240 g feta
1 Tbsp extra virgin olive oil
1 dried oregano to garnish


  1. Combine tomato, onion, cucumber and olives in a bowl.
  2. Break the feta into large pieces and scatter over the top.
  3. Drizzle with the olive oil and sprinkle with the oregano.
