Beef that tastes great, is falling apart, and is smothered with the reduced cooking liquid – what could be better? Serve in summer with a greek salad, or in winter with steamed vegies. Serves 6+
1/4 cupolive oil
1 Tbspdried oregano
to taste,salt and pepper
1.2kgbeef blade roast
Preheat oven to 160 C or 140 C fan-forced.
Mis together the oil, lemon juice and oregano in a large bowl. Season with salt and pepper to taste. Add beef and turn to coat. Place beef and marinade in an oven bag and use a tie to seal tightly. Place in a baking pan and bake for 2 hours, until beef falls apart.
Pour marinade juices from oven bag into a small saucepan. Simmer for 8-10 minutes, until slightly reduced.
