It sounds like a Dr Seuss recipe, but this one is full of amazing ingredients to keep you feeling full for hours. Serves 3


6 eggs
40g baby spinach
40g kale leaves, finely chopped
pinch chilli flakes
10 kalamata olives, pitted and chopped
to taste salt and pepper
1 Tbsp coconut oil
30g rocket
1 avocado, sliced
2 Tbsp olive oil


  1. Whisk the eggs in a bowl. Add the spinach, kale, chilli flakes, olives, salt and pepper, and mix well.
  2. Heat the coconut oil in a small frypan over medium heat. Pour one third of the egg mixture into the pan and cook for 4 minutes, or until it’s firm. Use a spatula to fold in half. Remove to a warmed plate. Repeat twice more with the remaining mixture.
  3. Serve topped with fresh rocket, avocado slices and a drizzle of olive oil.
