Juice of ½ lemon
3 cloves garlic, minced
1 Tbsp olive oil
½ tsp salt
500g chicken breast, cut into bite-sized pieces
1 red capsicum, cut into about 8 squares
1 green capsicum, cut into about 8 squares
1 zucchini, sliced
1 red onion, cut into wedges
Metal skewers (or wooden skewers that have been soaked in water)
- In a mixing bowl, mix together lemon juice, garlic, olive oil, and salt. Add the chicken and vegies and toss to combine.
- Thread chicken and vegies onto skewers.
- Grill for 8-12 minutes, or until chicken is cooked through.
