Many families need to find inventive ways to get kids eating vegies, and this is a great way that’s healthy and the kids love the taste. Serves 8

Ingredients

1 (400g) can diced tomatoes
2 swedes or turnips, diced
1/2 large onion, diced
3 large cloves garlic, crushed and chopped
1 handful baby spinach, chopped
1 Tbsp olive oil
pinch dried parsley
pinch dried oregano
pinch dried thyme
to taste salt and pepper
750g minced beef
8 rashers short-cut bacon

Method

  1. Combine vegies, herbs and spices in a pot over medium heat. Cover and cook for about 20 minutes until softened.
  2. Blend the vegetables together to make a thick sauce. Season to taste. Transfer to a large bowl and let cool.
  3. Preheat the oven to 200 C. Add the minced beef to the cool vegetable sauce. Mix with your hands until fully blended. Divide into 8, shape into mini-meatloaves, and place on a baking tray. Top each with a piece of bacon. Cook until the bacon is a little crispy, around 45 minutes.
