Many families need to find inventive ways to get kids eating vegies, and this is a great way that’s healthy and the kids love the taste. Serves 8
Ingredients
1 (400g) can diced tomatoes
2 swedes or turnips, diced
1/2 large onion, diced
3 large cloves garlic, crushed and chopped
1 handful baby spinach, chopped
1 Tbsp olive oil
pinch dried parsley
pinch dried oregano
pinch dried thyme
to taste salt and pepper
750g minced beef
8 rashers short-cut bacon
Method
- Combine vegies, herbs and spices in a pot over medium heat. Cover and cook for about 20 minutes until softened.
- Blend the vegetables together to make a thick sauce. Season to taste. Transfer to a large bowl and let cool.
- Preheat the oven to 200°C. Add the minced beef to the cool vegetable sauce. Mix with your hands until fully blended. Divide into 8, shape into mini-meatloaves, and place on a baking tray. Top each with a piece of bacon. Cook until the bacon is a little crispy, around 45 minutes.
