Ingredients

  • 300g frozen spinach, thawed and excess liquid squeezed out 
  • 1/2 cup sour cream 
  • 5 Tbsp sugar-free mayonnaise 
  • 1/3 cup parmesan 
  • 1/4 cup chopped spring onion 
  • 1 clove garlic, crushed 
  • 1 cup shredded mozzarella cheese 
  • Fresh pepper to taste 

Method

  1. Preheat the oven to 180°C. 
  2. Combine all the ingredients in an oven-proof dish and mix well. Bake for 20-25 minutes, until hot and cheese is melted. 
  3. Serve with vegetable crudites.
