Serves 10


1kg barramundi
1 – 5 Tbsp red curry paste, depending on brand and taste preference
2 Tbsp lime juice
2 Tbsp fish sauce
2 onions finely diced
1 cup coriander finely chopped
3 small red chillies finely chopped
4 fresh kaffir lime leaves finely chopped
Zest of 1 lemon


  1. Preheat oven to 180o C. Heat a little coconut oil in a fry pan over medium heat. Add fish, in batches if necessary, and cook on both sides. Remove from fry pan and set aside to cool.
  2. Use a fork to break up and mash the fish, then mix with all the other ingredients except the coconut oil.
  3. Take a tablespoon of mixture and form a ball with wet hands. Place the balls on lined baking trays with plenty of room around each ball. Brush each ball with a melted coconut oil. Bake for 15-20 minutes or until lightly browned
