Suits all phases – Serves 4 to 6
Ingredients
3 cups chopped kale
1/2 Tbsp olive oil
pinch of salt
3 cups chopped romaine lettuce
250g strawberries, quartered
1 large ripe avocado, sliced
1 1/2 Tbsp black sesame seeds
3 Tbsp rice wine vinegar
2 Tbsp coconut oil
1 Tbsp soy sauce
Salt and pepper, to taste
Method
- Place kale in a large bowl and drizzle with olive oil and a pinch of salt. Massage the oil and salt into the kale.
- Add the lettuce, strawberries, and avocado to the bowl, and sprinkle with sesame seeds.
- Combine vinegar, sesame oil, soy sauce, and pepper in a small jar and shake to combine.
- Drizzle the dressing over the salad and toss. Season with salt and pepper and serve.
