Suits phase 2 onwards – Serves 4


1 bunch green kale
1 bunch purple kale
3 capsicums, finely sliced
6 radishes, sliced into matchsticks
1 carrot, sliced into matchsticks
¼ cup smooth peanut butter
Zest of 1 lime
3 Tbsp lime juice
2 Tbsp olive oil
2 tsp sesame oil
¼ tsp salt


  1. Wash the kale and remove the ribs. Slice finely. Place in a bowl with the capsicum, radish and carrot. Set aside.

  2. Mix together the peanut butter, lime zest, lime juice and oils, adding more lime juice if the mixture is too thick. Add salt to taste.

  3. Mix the dressing into the salad and toss well. Serve with meat of choice.
