This is a healthy home-made version of a take-away favourite, suitable for any meal including kids’ lunchboxes. Serves 5


1 small iceberg lettuce, cored and separated into cups
2 tomatoes, chopped
1/2 small red onion, thinly sliced
1 Lebanses cucumber, halved lengthways, seeded & chopped
1 tsp oregano leaves
2 Tbsp extra virgin olive oil
500g lamb strips
200g tzatziki
to serve lime wedges


  1. Chill lettuce cups for 10 minutes or until crisp.
  2. Place the tomato, onion, cucumber and oregano in a bowl. Add half the oil and season. Toss to combine.
  3. Heat remaining oil in a large frypan over high heat. Cook the lamb in batches for 1-2 minutes each side.
  4. Divide the lamb among the lettuce cups. Top with tomato salad and a dollop of tzatziki. Serve with lime wedges.
