This is a healthy home-made version of a take-away favourite, suitable for any meal including kids’ lunchboxes.

Serves 6

Ingredients

600gm lamb shoulder
1 small iceberg lettuce, cored and separated into 12 cups
300g cherry tomatoes, quartered
1 small red onion, thinly sliced and chopped
2 Lebanese cucumbers, halved lengthways and chopped
Large handful oregano leaves, chopped
20 Kalamata olives, pitted and halved
2 Tbsp olive oil

200gm tzatziki
Lime wedges


Method

  1. Pre-heat BBQ on medium heat and cook for 30 minutes. Allow to rest.

  2. Chill lettuce cups for 10 minutes.

  3. Place the tomatoes, onion, cucumber, oregano and olives in a bowl. Add the oil and season. Toss to combine.

  4. Slice the lamb before serving.

  5. Divide the lamb into the 12 lettuce cups, top with the salad and a dollop of tzatziki.

  6. Serve with lime wedges.

Very easy and quick to prepare, tastes yummy and any left-overs are perfect for lunch tomorrow.
