Fresh thyme adds an amazing flavour to this lemony chicken, which just takes advantage of some basic staples of the kitchen. Serves 4


4 chicken breasts
to taste, sea salt and black pepper
5 cloves garlic, minced
1/2 cup chicken stock
1 lemon, zest and juice
2 or 3 sprigs fresh thyme
1 lemon, cut into 4 wedges


  1. Preheat oven to 200°C. Season the chicken on each side. Place the chicken in a baking dish and add the minced garlic, chicken stock, lemon zest and juice, and thyme sprigs.
  2. Place in the oven and cook, basting once or twice, for 30-40 minutes, until the chicken is cooked through.
  3. Serve warm with the lemon wedges and steamed vegies.
