Here’s a great idea for lunch boxes – yours or the kids’ – that takes only minutes longer than sandwiches. Serves 4


1 avocado
1 lemon, juiced
8 iceberg lettuce leaves
8 slices shaved ham
8 cheese singles or sliced cheese
1 Lebanese cucumber, cut into fine strips
1 red capsicum, cut into fine strips


  1. Peel and pit the avocado, and scoop the flesh into a small bowl. Drizzle with lemon juice and mash with a fork.
  2. Lay the lettuce leaves on pieces of cling wrap. Layer the ham and cheese on top, then divide the cucumber and capsicum strips and place along the centre of the other ingredients. Spoon the avocado over the top.
  3. Carefully roll the lettuce leaves up, enclosing the other ingredients, and wrap tightly in cling wrap.
  4. Refrigerate until ready to serve.
