Suits all phases – Serves 4
Ingredients
1/3 cup mayonnaise
1/2 tsp Indian curry powder
3/4 tsp salt
Freshly ground black pepper
1 small apple, peeled, cored, and cut into 1 cm dice
Juice from ½ medium lime
500g cooked chicken
½ cup packed fresh coriander, roughly chopped
2 spring onions, trimmed and thinly sliced
¼ cup almond slivers, toasted
Method
- Combine the mayonnaise, curry powder, salt, and pepper to taste in a small bowl.
- In a large bowl, toss the apple chunks with the lime juice.
- Shred the chicken and toss it into the bowl with the apples. Add the coriander, spring onion, and curried mayonnaise, and mix well.
- Top with toasted almond slivers and serve.
