Suits all phases – Serves 4


1/3 cup mayonnaise
1/2 tsp Indian curry powder
3/4 tsp salt
Freshly ground black pepper
1 small apple, peeled, cored, and cut into 1 cm dice
Juice from ½ medium lime
500g cooked chicken
½ cup packed fresh coriander, roughly chopped
2 spring onions, trimmed and thinly sliced
¼ cup almond slivers, toasted


  1. Combine the mayonnaise, curry powder, salt, and pepper to taste in a small bowl.
  2. In a large bowl, toss the apple chunks with the lime juice.
  3. Shred the chicken and toss it into the bowl with the apples. Add the coriander, spring onion, and curried mayonnaise, and mix well.
  4. Top with toasted almond slivers and serve.
