So many people turn up their noses at the humble, super-healthy cabbage, but some simple tricks make it absolutely delicious. Serves 4
1 large green cabbage, cut into 2cm slices
3 Tbsp extra-virgin olive oil or melted ghee
5 large cloves garlic, minced
to taste, sea salt and black pepper
- Preheat oven to 200 C. Brush both sides of each cabbage slice with the olive oil or ghee.
- Spread the garlic evenly on each side of the cabbage slices, and season to taste with the salt and pepper.
- Roast for 20 minutes; then turn the slices over and roast again for another 20 minutes or until the edges are crispy.
