So many people turn up their noses at the humble, super-healthy cabbage, but some simple tricks make it absolutely delicious. Serves 4


1 large green cabbage, cut into 2cm slices
3 Tbsp extra-virgin olive oil or melted ghee
5 large cloves garlic, minced
to taste, sea salt and black pepper


  1. Preheat oven to 200 C. Brush both sides of each cabbage slice with the olive oil or ghee.
  2. Spread the garlic evenly on each side of the cabbage slices, and season to taste with the salt and pepper.
  3. Roast for 20 minutes; then turn the slices over and roast again for another 20 minutes or until the edges are crispy.
