Serves 4

Ingredients

2 – 3 Tbsp coconut oil
1 cup chopped onion
1 clove garlic, minced
500g minced beef
1½ Tbsp curry powder
2¼ tsp salt
⅛ tsp pepper
⅛ tsp cinnamon
⅛ tsp ginger
⅛ tsp turmeric
1½ (400g) cans diced tomato
3 cups cauliflower florets
2 cups chopped green beans
½ – 3 cups chopped snow peas

Method

  1. Melt oil or butter in a large pan. Add onion and garlic and cook until onion softens and garlic begins to brown.
  2. Add meat and cook thoroughly.
  3. Add curry, salt and spices. Stir well.
  4. Add beans, cauliflower and tomatoes to the pan. Bring to a simmering boil. Reduce heat, cover and simmer for 15 minutes.
  5. Add the cauliflower and cook for 5 minutes, then add the green beans and cook a further 3 minutes.
  6. Add snow peas and stir through. Allow to stand for 3-4 minutes before serving.
