Serves 4
Ingredients
2 – 3 Tbsp coconut oil
1 cup chopped onion
1 clove garlic, minced
500g minced beef
1½ Tbsp curry powder
2¼ tsp salt
⅛ tsp pepper
⅛ tsp cinnamon
⅛ tsp ginger
⅛ tsp turmeric
1½ (400g) cans diced tomato
3 cups cauliflower florets
2 cups chopped green beans
½ – 3 cups chopped snow peas
Method
- Melt oil or butter in a large pan. Add onion and garlic and cook until onion softens and garlic begins to brown.
- Add meat and cook thoroughly.
- Add curry, salt and spices. Stir well.
- Add beans, cauliflower and tomatoes to the pan. Bring to a simmering boil. Reduce heat, cover and simmer for 15 minutes.
- Add the cauliflower and cook for 5 minutes, then add the green beans and cook a further 3 minutes.
- Add snow peas and stir through. Allow to stand for 3-4 minutes before serving.
