2 (125g) pork fillets
1 large tomato, sliced
6 tsp avocado
40g grated parmesan
- Pre-heat grill. Place pork on grill tray and grill, turning once, until cooked through.
- Mash the avocado and spread on each pork fillet. Top with tomato slices and sprinkle with parmesan.
- Return to the grill and cook until golden brown.
- Serve with steamed vegetables or salad.
