Ingredients

  • 1 Tbsp olive oil 
  • 1 kg minced beef 
  • Salt and pepper 
  • 1 cup chopped onion 
  • 1 cup diced red capsicum 
  • 3 cloves garlic, minced 
  • 1/4 cup chopped coriander 
  • 1 small tomato, diced 
  • 240g can tomato puree 
  • 1/4 cup green olives 
  • 1 1/2 tsp ground cumin 
  • 1/4 tsp garlic powder 
  • 2 bay leaves 

Method

  1. Heat olive oil in a large deep skillet on medium-high heat. Add the minced beef, season with salt and a little pepper, and cook, breaking up the lumps and stirring occasionally. 
  2. When meat is no longer pink, drain all the liquid from pan. Add the onion, capsicum and garlic to the meat and cook for 3-4 minutes. 
  3. Transfer the meat to the slow cooker, then add the remaining ingredients. Cook on High for 3 to 4 hours or Low for 6 to 8. 
  4. Before serving, taste for salt and spices and add more as needed. 
  5. Discard the bay leaves and serve over cauliflower rice or zucchini noodles.
