Pork with Mustard & Vinegar marinade

Ingredients

  • 800gm pork fillet or loin chops

Marinade

  • 1/3 cup Dijon mustard
  • ¼ cup white vinegar
  • 1 Tbsp dry sage
  • 1 Tbsp Italian herbs
  • 1 tsp minced garlic
  • Salt and pepper to taste
  • ¼ cup olive oil

Method

  1. To make marinade mix mustard and vinegar together. Add the sage, herbs, garlic, salt and pepper. Using a whisk, slowly add the oil to create an emulsion.
  2. Place the pork into an air-tight container, add the marinade, and then coat and toss before refrigerating for 4-6 hours.
  3. Cook the pork in a pan, bake in the oven or on the BBQ.

Serve with a green salad or Asian greens.
