There’s something about pork that lends itself to being cooked with fruit. In this recipe we’ve got plums instead of the traditional apples. Enjoy. Serves 4
Ingredients
500g pork fillet
coarse salt to taste
2 tsp olive oil
2 tsp butter
4 plums, cut into wedges
1 red onion, thinly sliced
1/4 cup red wine vinegar
Method
- Slice the pork fillets into 1 cm slices and season with salt.
- Heat a large frypan or skillet over moderate heat and add the olive oil and butter. Add the pork and cook on both sides until lightly browned. Remove.
- Add the plums and red onion and cook over medium heat for one minute. Add vinegar, and stir until bubbling. Return pork to pan, and toss.
