There’s something about pork that lends itself to being cooked with fruit. In this recipe we’ve got plums instead of the traditional apples. Enjoy. Serves 4

Ingredients

500g pork fillet
coarse salt to taste
2 tsp olive oil
2 tsp butter
4 plums, cut into wedges
1 red onion, thinly sliced
1/4 cup red wine vinegar

Method

  1. Slice the pork fillets into 1 cm slices and season with salt.
  2. Heat a large frypan or skillet over moderate heat and add the olive oil and butter. Add the pork and cook on both sides until lightly browned. Remove.
  3. Add the plums and red onion and cook over medium heat for one minute. Add vinegar, and stir until bubbling. Return pork to pan, and toss.
