This simple green salad takes advantage of the special combination of apple and walnuts. Add a little blue cheese if you like, and serve with BBQ Steaks. Serves 6


1 head radicchio, thinly sliced
1/2 bag mesculin leaves
1 apple, cut into matchsticks
to taste olive oil
to taste balsamic vinegar
1/2 cup walnuts, toasted


  1. Combine the radicchio, mesculin and apple in a large serving bowl.
  2. Drizzle the salad with olive oil and vinegar, and toss.
  3. Toss the walnuts over the salad and serve.
