ICT Reset: Suits all phases

Ingredients

  • 600g rib fillet steaks on the bone
  • ½ cup fresh mint
  • ½ cup fresh coriander
  • ½ cup fresh flat leaf parsley
  • 1/2 cup extra virgin olive oil
  • Juice of 1 lemon
  • 1 clove garlic, minced

Method

  1. Cook on a medium BBQ for 40 mins.
  2. Turn grill up high and sear both sides for 90 seconds.
  3. Rest steak for 10 mins.
  4. Blend or chop the fresh herbs. Add the oil, lemon juice and garlic and combine well.
  5. Cut the meat into slices and drizzle the dressing over the steak to serve.
