Suits all phases – Serves 4


1 avocado, peeled and pitted
juice of a large lemon
3 Tbsp olive oil
1 clove garlic
1 pinch salt
Freshly ground black pepper, to taste
3-4 Tbsp water
large bag of mixed salad leaves
400g roasted turkey breast, sliced
1 small red onion, thinly sliced
2 whole small cucumbers, sliced
20 green olives, pitted and chopped


  1. Place the avocado, lemon juice, olive oil, garlic, salt, and black pepper in a food processor and process until very smooth.
  2. Slowly add the water and continue processing until the dressing is thick and creamy.
  3. Divide the greens between two serving plates. Top with the sliced turkey, red onion, cucumber, and green olives. Drizzle over the avocado dressing and serve.
