Suits all phases – Serves 4
1 avocado, peeled and pitted
juice of a large lemon
3 Tbsp olive oil
1 clove garlic
1 pinch salt
Freshly ground black pepper, to taste
3-4 Tbsp water
large bag of mixed salad leaves
400g roasted turkey breast, sliced
1 small red onion, thinly sliced
2 whole small cucumbers, sliced
20 green olives, pitted and chopped
- Place the avocado, lemon juice, olive oil, garlic, salt, and black pepper in a food processor and process until very smooth.
- Slowly add the water and continue processing until the dressing is thick and creamy.
- Divide the greens between two serving plates. Top with the sliced turkey, red onion, cucumber, and green olives. Drizzle over the avocado dressing and serve.
