The parmesan and garlic make this low-carb cauliflower dish reminiscent of the scalloped potatoes we all loved as kids. Serves 6


3 Tbsp olive oil
2 Tbsp minced garlic
1 large cauliflower, cur into florets
to taste, salt and pepper
1/3 cup greated parmesan
1 Tbsp chopped parsley


  1. Preheat oven to 220 C. Grease a large casserole dish.
  2. Place the olive oil and garlic in a large resealable bag. Add the cauliflower, and shake to mis. Pour into the prepared casserole dish and season with salt and pepper to taste.
  3. Bake for 25 minutes, stirring halfway through.
  4. Top with parmesan and parsley, and grill of 3-5 minutes, until golden brown.
