The parmesan and garlic make this low-carb cauliflower dish reminiscent of the scalloped potatoes we all loved as kids. Serves 6
Ingredients
3 Tbsp olive oil
2 Tbsp minced garlic
1 large cauliflower, cur into florets
to taste, salt and pepper
1/3 cup greated parmesan
1 Tbsp chopped parsley
Method
- Preheat oven to 220 C. Grease a large casserole dish.
- Place the olive oil and garlic in a large resealable bag. Add the cauliflower, and shake to mis. Pour into the prepared casserole dish and season with salt and pepper to taste.
- Bake for 25 minutes, stirring halfway through.
- Top with parmesan and parsley, and grill of 3-5 minutes, until golden brown.
