At any BBQ, the person who cooks the meat gets all the credit, but we all know it’s the salads that make the meal truly great. Here’s a stunning but quick one. Serves 4


120g rocket
250g strawberries, hulled and quartered
2 avocadoes, diced
1/2 cup macadamia nuts, roughly chopped
3 Tbsp olive oil
1 Tbsp balsamic vinegar
to taste salt and pepper


  1. Place the rocket, strawberries, avocado and macadamias in a large bowl and toss gently with your fingers.
  2. In a small bowl or jug, whisk together the olive oil and balsamic vinegar, and season to taste. Pour over the salad and serve immediately.
